Agustin,
Sounds like you are almost correct with the water temp. Just a little high. There are two things you can try with the carb.
1) Go one size bigger with the main jet. This will make your EGTs a little cooler at full throttle but won't affect EGTs at lower speeds.
2) Lower the clip on the jet needle one notch. This will raise the needle and cool the EGTs in the low and mid range RPMs but will not affect the full throttle temps.
