Thanks to all the advice! Everything is now back to normal. What I done:
1. Checked tank outlet - clear
2. Checked fuel filter - clean
3. Checked gascolator - good condition
4. Re-routed fuel flow sender and removed the jet from the sender
5. Installed the flow restictor and fuel return line to tank
6. Checked carb bowls and jets for dirt and obstructions - clear
When performing the test flight the EGTs were normal at 750 - 790C, CHT 80 - 87C, Oil temp 80 - 84C. Engine is running smoothly with no issues.
I believe it was a combination of the fuel flow sender jet (causing sudden expansion inside the sender causing vapour) and by not having a return line to the tank installed.
I will keep monitoring the temps but think it is sorted now. It was definately fuel starvation...
