It is normal to see a small drop in oil pressure, when oil gets up to full operating temp.
Good Stable oil pressure and a (worryingly) high oil temperature rarely go together.
Sustained normal range oil temperature and low oil pressure indication are similarly unusual.
EGT temperature only fluctuate/change with changes in engine power/load and changes in fuel delivery (ie inflight adjustable carburetor).
I would bet that the readings your video show, are most likely caused by damaged wire(s) that is "shorting" (intermittent earthing out) possibly related to under cowl air flow changes, due to aircraft attitude/engine power changes OR bad contacts OR a distant last - failing sensors (s)
