You can buy from Lockwood or leaf and I think CPS, a hose barb which has a threaded opening in its side to screw a temp sensor into. You cut the water hose going from the engine to the radiator, insert the barb, screw in the sensor, ground it all, and your ready to go.
You coolant only cools the heads so the coolant is within a few degrees of the CHT's. You can put a water temp probe in, but it really isn't necessary.
